Strawberry Recipes: Salads
ByA healthful salad recipe made with just-picked greens and strawberries is the tastiest reason to eat in season.
Q: What would a strawberry be doing in a salad?
A: Adding taste and vitamins.
Strawberry and Spinach Salad is one of my favorites.
It may seem strange due to the ingredients but one bite will surprise your taste buds and make you wanting more. Besides, it’s very refreshing in the summer.
Strawberry Spinach Summer Salad
Yield: 4 servings
You’ll need:
- 1 bunch spinach, rinsed
- 10 large strawberries, sliced
- 1/2 cup white sugar
- 1 teaspoon salt
- 1/3 cup white wine vinegar
- 1 cup olive oil
- 1 tablespoon poppy seeds
Instructions:
- In a large bowl, mix spinach and strawberries.
- In a blender, place sugar, salt, vinegar, oil, and blend until smooth.
- Stir in poppy seeds.
- Pour over spinach and strawberries.
- Then toss to coat.
Strawberry and Lettuce Salad
The combination of lettuce, toasted pecans, and fresh strawberries is unusual, but sooo good!
Ingredients:
1/2 cup poppyseed dressing
1/4 cup milk
1/4 cup white sugar
1/8 cup distilled white vinegar
1 tablespoon poppy seeds
1 head lettuce, torn into bite-size pieces
1/2 red onion, sliced
1 cup sliced fresh strawberries
1/2 cup toasted pecans
1/4 cup fresh cucumbers, sliced
Directions:
In a small bowl, mix together poppyseed dressing, milk, sugar, vinegar, and poppy seeds.
Refrigerate until ready to use.
Combine lettuce, onion, strawberries, pecans, and cucumbers in a salad bowl. Toss with dressing.
Strawberry Cucumber Salad
This wonderful mid-summer salad is made with ripe strawberries and cool cucumbers.
It’s framed with a honey vinaigrette and served on spinach greens.
Ingredients
1 cup frozen peas
2 cups fresh strawberries, sliced
1 medium cucumber, chopped into 1/2 inch pieces
1/2 cup walnut pieces
1/4 cup white vinegar or balsamic vinegar
1/4 cup honey
2 tablespoons sesame oil
1/4 teaspoon salt
spinach greens
Directions
Mix the peas, strawberries, cucumber, and nuts together. The peas don’t need to be thawed.
In another bowl make the vinaigrette, by mixing the vinegar, honey, oil, and salt together.
